Cucumber and Avocado Salad with Garden Herbs

We harvested some cucumbers from our vegetable garden and made a salad with avocado and herbs also from the garden.

In this recipe, I beat the cucumbers with a rolling pin. It’s because beating them makes the cross-sectional area of the cucumber larger than cutting with a knife and the seasoning is more easily absorbed.


Ingredients for Cucumber and Avocado Salad with Garden Herbs

  • Cucumber: 2-4 
  • Avocado: 1
  • Garlic: 1 or 2 cloves
  • Herbs of your choice, such as mint or dill
  • Olive Oil: 1 Tbsp
  • Lemon Juice: ¼ pieces of Lemon
  • Salt and pepper


How to Make Cucumber and Avocado Salad with Garden Herbs

  1. Beat the cucumbers with a rolling pin and cut (or split with fingers) into bite-sized pieces. Remove the skin and seeds from the avocado and cut into small pieces. Clean the herbs and cut into small pieces. Finely chop or grate the garlic.
  2. Combine all the ingredients and serve.
